We had a very passable one at La Coupole--for a large brasserie.
There is a place on rue Ste. Dominique that is highly recommended (and a senior moment) and it was terrible!!
On any given day, any cassoulet, in the fall, can be sublime!

I don't think I've had a decent cassoulet ever in Paris, at least compared to the ones you get in the SW, but Le Relais du Sudouest used to have a palatable one (not sure if it's even around anymore, as I gave up on ordering cassoulet in Paris years ago.). DON'T order it at Thoumieux - horrible!

Chez Papa, with locations throughout Paris, has good cassoulet. The restaurant is specialized in the food of southwestern France.

Happy to help Nottingham. I don't usually answer food questions but at least 2 or 3 times a year I've seen this question asked on Trip Advisor so I just pulled up a few of the old threads. BTW, I think in one of the threads I linked to someone mentioned there are two places on rue Saint-Dominique, La Fontaine de Mars and Le Violon d'Ingres. I don't know which one Gretchen ate at.

I love Cassoulet and once ate it in all three major Cassoulet towns when we toured SW France--Carcassone, Castelnaudry and Toulouse. I've also had it in several Paris restaurants and the one I like best there is at Josephine/ Chez Dumonet on the Rue Cherche Midi in the 6th arrondissment. I recall reading a post on this site some time ago by a woman who was searching for the ultimate French dish and finally settled on Josephine's cassoulet. I concur with her. Hope you get a chance to try it. As far as I know, it's a staple on their menu.

We were in Paris in May and stopped by Les Cocottes (Christian Constant) near the Eiffel Tower on Rue St. Dominique for cassoulet. It is inexpensive by French standards and very ultra modern setting. The Cocettes refer to dishes in which food is served in ceramic cocette dishes. You can get vegetarian based dishes or dishes with meat.
We got there right when it opened one night and there was a large crowd queing up. The food was good, not exceptional, but we thought it was good value for quality.
