Food in Cyprus

I've been to Cyprus twice and enjoyed the food while I was there. As Cyprus now gets a lot of its revenue from tourism, I think that has had an effect on the local cuisine. I can't imagine they ate quite so many chips before the tourists arrived - or perhaps before the British arrived.
