Have heard of it, just never been, but gets good reports for dinner/theatre side of things adn being a completely different style of dining. Try www.edizioniteatrodelsalecibreofirenze.it/ and click on il Teatro del Sale (second from left). Only in Italian from what I could see. Click ahead on the calendar on the bottom left and see what comes up, or send them an email (click "Contatti" for their address) and ask for information on the dates you'll be there.
You will have to purchase a membership (around Euro5 I believe) in order to dine there as it's technically "Members Only" but that's a small price to pay for what seems to be a fun evening. The dishes are all buffet style, no menu, and are plentiful from all accounts. From the looks of it, I'd book ahead, esp if on a Fri/Sat - they are closed Sun/Mon.
If you do go, be sure to post back and let us know how it was. Lived there for ages, and visit often, but have never been to it so can only offer what Florentine friends have told me.
