If $40 per night for a single w/ shared bath is not too much, please consider the Hotel Dali. This hotel is wonderfully located in a safe area (my mom and I just stayed there a couple of weeks ago) and is run by a lovely young couple who are natives to Florence and incredibly helpful and knowledgeable about everything. I'm sure they could suggest some fantastic restaurants.

Sarah, have a wonderful trip! I did the same thing for a little over a week the beginning of last November because of really cheap airfare. Try looking at www.eurocheapo.com for accomodations. I stayed at Locanda Orchidea, which is on the list for 50 Euro/night for a single. However, since I was staying a bit longer, they lowered the price a bit to 44 Euro.
There is so much to entertain yourself with for little money in Florence. I'll dig around and see if I can find my notes for sightseeing and restaurant ideas.

Florence doesn't have a metro system. It has a very good bus system. See the route maps and schedules at http://www.ataf.net/Default_EN.asp
There are 7 buses that stop in front of the B&B Peterson. One day we took the #13 in a loop from the hotel and back. Made a nice tour of the city.
Don't forget to take the #7 from the train station to Fiesole and watch the sun go down over a carafe of wine on the terrace of the Blu Bar.
