I would definitely do the Uffizi, Accademia, and if you like sculpture, the Bargello.
The Accademia and Bargello do not take that much time, and in the Uffizi you can breeze by what does not interest you.
I didn't care much for the first floor in the Uffizi and the drawings; they just don't interest me that much.
I think you would like Santa Croce also.

I agree that the Duomo, the Baptistry, the Accademia, and the Uffizi are musts; we also loved taking the bus up to Piazzale Michelangelo and watching the sunset.
No one has mentioned the incredible Pitti Palace, which was phenomenal to see! Not just Renaissance art, but wonderful furnishings and decorative art as well. It has several collections for which you can buy a multiple entry pass. We went back a second time, and still did not see every thing.
