It really depends on what your likes are.
I feel that the Accademia has only one thing to realy see, David. I wish I skipped the rest.
Uffizi, I liked it, but this is the type of art I like. Others will not.
As most posters have stated, make reservations. This will allow you to make better use of your time.
I also like, and recommend, to mix things up. With so much to see, churches all day or museums all day can burn you out. Also take some time to rest, wander, and do nothing.

I am somebody who didn't enjoy florence due to the incredible crowds, even at midnight. However I would once again endure those 3 crowded days in Florence just for the sight of Michelangelo's magnificent David in the Uffizzi gallery...just for that alone! And the good food...bring restaurant recommendations with you. Good food in Italy is actually cheaper than bad food, if you know where to go!
Have fun. We found Accademia museum to be uncrowded in the afternoon, and this was even on the very busiest days of the summer.
When I first saw David, not being an art expert, I wasn't sure why he was so amazing except for his size. However as I wandered around, and returned to David, I realized that David is so real he loos like he could indeed step down and start walking around, muscles and all. No other statue in the museum was that life-like.

Glad you have decided to visit the Accademia and see David - it is truly incredible even if you do not like museums. Shouldn't be missed. As for the Uffizi, we visit Florence on each trip to Italy. I absolutely love the city and there is so much to see and do. However, on our most recent visit last October, I finally realized that, after 5 visits, I don't care if I ever see the Uffizi again. Blasphemy? No. Overload. David is the opposite - no matter how may times I see the statue, I can't wait to see it again.
