Considering you say you like scenic vistas, nature, etc., I'd probably choose the Rome/Tuscany option, skip the CT day trip, and rent a car for the Tuscany portion. You might also consider Umbria instead of Tuscany. In terms of what to see, you can't swing a cat without hitting a beautiful hilltown in Tuscany or Umbria, usually with some worthwhile art and churches, medieval architecture, a good restaurant or two and buckets of history, and possibly the ability to do short country walks.
I love Venice but it doesn't sound as if you have much desire to see it other than the gondola ride. The AC is stunning and offers wonderful hiking/walking, but could be difficult with a baby. I stayed in Ravello, which is gorgeous.
I would do 4 nights Tuscany (or Umbria) and 6 nights Rome.

Yeah the CT towns are all neat but also super mobbed with tour groups from ships and buses - the neat thing there IMO is to hike between the towns but with toddler not viable. Skip it - Tuscany by car sounds perfect.
