Well said. We are definitely interested in art, but not to the point where that is how we want to spend most of our day. However, we are definitely interested in seeing the most famous sculpture, and one of the most famous pieces of art, in the world. So we picked David over the Uffizi Gallery.

The ride from Siena to Salerno looks pretty straightforward to me. 5.5 hours with a change in Rome. Pack a lunch because you will not get to Positano in time for lunch. Be sure that you do not arrive in Salerno after the last ferry leaves, or you will be stuck with the bus. I can't remember exactly what the schedule is (and it is no longer listed since service as stopped), but it may be 3:30 or 5:00. It is a quick 10-minute walk from the train station to the ferry dock. The schedules for next year should be posted mid-March.

I understand the OP isn't much into art. But there's no rule that you have to examine every work of art in any museum. If that was the case, some of us would never make it out of the Louvre. Whether the collection is big or small, you can spend as little or as long looking at whatever interests you and skipping the rest.
Regarding the Uffizi, you can take a virtual tour to see photos of just about every work in every room on both floors. The designs and decorations of some rooms are as much a work of art as the pieces displayed in them.

Sandralist - do you know what 'lol' means? Maybe people your age don't know - but it actually signifies that I was brushing off your comment. You call that emotional but I don't. I assumed the OP was travelling in summer as 'hitting the beach' is hardly something they would contemplate in November. Really.I quantified my choice of the word hectic in that context. Not sure how many times you've been to the Amalfi Coast but I have spent four seasons there and the crowds begin late March and don't let up until early November.
