rankasej,
What is your hotel budget? That would help with reccommendations for hotels.
Are you arriving CDG from a long haul flight? Are you experienced with reading road signs and driving left-hand drive cars? The distance seems reasonable (most direct route is 250km) but that route takes you right round the Paris périphrique (ring road) at rush hour. Okay, road signs are fairly straight forward but be prepared for temporary detours and signs describing up to the minute road conditions, etc., and most of all be prepared to crawl around Paris.
Depending on your situation, consider taking the train to Tours, picking up a rental car there for a very easy drive to Amboise. Here are some train options (St Pierre is the Tours tain station):

Some of the chateau are sparsely furnished, I remember the interior of Azay as interesting, not an extensive tour and Chenonceaux as not having much furniture but walking in the gallery which extends across the river Cher is an experience.

I don't have specific reccommendations in your price range but booking.com comes up with various price quotes for a family room for three nights in May.
Have a look on www.booking.com
