While I absolutely love the countryside in Italy, I think it depends on when you are planning to go. If in the winter, cities are easier to navigate. I wouldn't miss Venice, Florence or Rome. Venice for its beauty, Florence for its food and its art, Rome because it is so fascinating. If you are going in the spring, add some time in the countryside and the smaller towns.
