Favorite Restaurant between Pont du Gard and Nimes
We will be traveling by car in late August from the Pont du Gard to Nimes. Our desire is to find an enjoyable lunch stop between the two locations. Enjoyable is not McDonalds nor high-end Michelin star. Rather excellent food, fabulous ambience, superior service.
Does anyone have a favorite restaurant and/or village to recommend? Our party is small, two adults. Thanks for sharing your ideas.

Except that isn't between Pont du Gard and Nimes at all, it's NW of Pont du Gard.
I was curious what kind of advice you'd get on this because I don't think your desires are realistic. That route is only 25 km to begin with, and there aren't amazing superior etc restaurants along the route, presuming you go by a major highway or N8086. The entire trip is less than an hour, but if you want to leave late and stop for lunch, I think you will be lucky just to find a decent, acceptable place, not the most amazing superior restaurant in France with an outstanding fabulous setting.
But since you do have so much time, you could go up NW to the restaurant recommended, as it is only 15 km away, if it is fabulous as you likely won't get one near N8086 between the Pont and Nimes. Frankly, if I were going to do that, I might just find one in Uzes which is just as close and has better choices (like La Parenthese). Since you have so much time, that's not a bad idea, actually.

This might be slightly out of your way but after doing a canoe trip to see the Pont du gard we had one of our best lunches of the trip at this cool outdoor restaurant/exhibit space called Le Tracteur in Argilliers.

Again my thanks for the additional ideas. I've lots of time to think, research, and put these thoughts onto my "options" list. I appreciate the suggestions.
