A series of trips would be very expensive I think but good idea - especially as original goal is highly unachievable. Maybe snag a gal or a guy from dating sights who may find the idea intriguing.

Some ideas for you.
It might be difficult to impossible to find right off people who could and would travel in the style you want, for the length you want. You might have to do the organizing yourself.
You could create a long trip with several separate legs. Lay out three or four, two to three week trips back to back, so they become sections of the longer trip, but each complete in themselves. Really have them well planned. People could do only one section if they wished.
Then, look for places to find interested people.
Senior Centers. Join your local one and post your trip on the bulletin board. Ask to give a lecture on travel, or give a small series of lectures on Europe. You will likely find others who would like to travel, but not alone.
Facebook. Make a separate, private, account with trip details. Let friends and family that might be interested know about it and how to sign up and how to pay. I have a friend who does one or two trips a year that way.
