eurostar london to paris return cheaper
 

I have noticed when trying to book Eurostar tickets from London to Paris that the return price is cheaper than one-way, is there any reason we could not book these return tickets but not use them as we are going on to Italy?

No reason at all. Often it works out cheaper for R-T than one way

No penalty. Just toss the return ticket.

You can even buy the ticket you're using as first class and the ticket you're tossing as second class.
