Emilia-Romagna Agritourism

We will be spending a couple weeks in Italy at the end of May. We are flying in to Florence and immediately taking a train to Monterosso for a couple nights. From there, we head to Siena for a couple nights and then off to Florence. Our trip is pretty much planned out up to Florence. Up to Florence, we are traveling with a group of around 20 people for a friends 50th birthday. After Florence, we are own our own for a couple days until we have to head back to the US. We leave Florence on Sunday, May 25 and have a flight home from Florence very early Wed, May 28.

Here is my question. After Florence, my husband and I would like to do some type of agritourism stay in the Emilia-Romagna region. I would like to have the opportunity to stay at a working farm and see first hand (and maybe participate in?) cheese, oil, wine, etc production. Or, someplace with a one day cooking class would also be very nice. I would prefer a stay with other outdoor options, such as hiking or biking. Can anyone provide recommendations for such a place in the Emilia-Romagna region? Budget would be up to $150 euro per night.

Thanks for the suggestions ekscrunchy. Does anyone have other places they would suggest I take a look at?
