You aren't in Scotland long - so "Scotland the Best" might be overkill - just sooooo much good info. But I'd recommend you at least take a look at it. I'm on my third edition. You can sometimes find it in Barnes & Noble/Borders, etc.
As for day tours vs. doing it on your own? There is nothing wrong w/ Rabbies or other tour companies. But IMHO you will be able to get off the beaten path and at a better pace if you drive. And especially if your husband is leaning that way. On such a short visit doing a series of day trip is sort of like the spokes of a wheel. Edinburgh is the hub and every day you take a different spoke out and back. That is a lot of to-ing and fro-ing.
Whereas if you drive up to the north (or even take the train and pick up your car there) you will have your 3 days to make it back down to wherever you are flying out of. You can see quite a bit in 3 days (enough to convince you to return to Scotland for a longer visit sometime). And you can be a ambitious or as lazy as you want.
For your time in Edinburgh - taking a Rabbies tour one day is a great idea

Hi, the groups are 12 people. On one we only had 9 but I think there will be a lot of people in town when you are there. You are not totally beat at the end of the day but the Highlands tour is a long one. I think it is around 10 hours. You can check it out on the website.
Hey, if your husband wants to drive more power to ya. I think you're getting the best of both worlds by being able to take tours while he's working and then hit the road for a few days. At least you'll have an idea of outside the city if you do a day trip beforehand.
have a great time. For eating we enjoyed Giorgios Trattoria on High street and Browns on George street or something like that. Both pretty casual. We did eat at The Witchery. It was expensive but it was a very good meal, service and experience.
