Close to Pantheon I suggest you LA VECCHIA BOTTEGA DEL VINO www.lavecchiabottegadelvino.it .
Gino & Antonio, two brothers, are very kind and clever and you will enjoy the food, the wine adn the atmosphere.

From my trip report:
The Café Tournon (http://www.cafe-tournon.abcsalles.com/fiche.php?n=13930) is worth a look for those near the Luxembourg, it has good food and good wine, although it is not cheap: $107 for two.

Armando al Pantheon is a very good, moderate-priced Roman trattoria a few steps from the Pantheon. Make sure you reserve ahead of arrival.
I wrote about two of my dinners here in this report of a Roman trip when I stayed in a hotel next to the Pantheon:

I second Armando al Pantheon. We also ate there twice, going back a second time to try their famous oxtail. They only make it on Thursdays and it's a good idea to reserve it in advance.
I wrote about both dinners on my website (with photos).

Look at the Rome 03/08 report.
They have a website where you can make a reservation too.
