Luton is slightly further from the centre of London than Heathrow, but the train from Luton takes about as long as the tube from Heathrow, so it's really immaterial. However, you do have to get out from Paris, go through the terminal experience, fly to Luton, get the bus 5 mins to the airport station, take the train, then probably change to the tube.
Presumably you've already planned to travel the day before the transatlantic flight, so you've no particular interest in using the same London airport for both flights. If you planned to stay overnight at the airport, take Will's advice about cheapos on bmi (though check AF and BA too)
Eurostar almost always is the quickest way between the two centres, and is less hassle for most people. It's very unlikely to be anywhere near as cheap as Easyjet, though in the time since you posted the amazingly cheap flight has probably disappeared.
Understand EasyJet's idiosyncrasies (this board is stuffed with descriptions), and then decide between the relative prices and convenience.
