Driving from Bordeaux to Madrid - where to stop along the way?

We're driving from Bordeaux to Madrid in June with our 5 yr old. We have enough flexibility before reaching Madrid to stay 1-2 nights in 1 or 2 towns along the way.
Any recommended overnight stops?
Any recommend stops that can be done without staying overnight?
We would love suggestions on sights, restaurants & hotels (if applicable).
Thanks!!!!
PS - as far as things we enjoy doing: historical sights, aqueducts, ruins, museums (yes, even with our 5 yr old!), eating, drinking good wine, sampling regional delicacies, the beach & shopping.

First stop: San Sebastian

Second stop: Soria

Not all the pictures are relevant, but I think that I ge0-tagged most of them. So with a map you should be able to see what might interest you for a stop along the way.

San Sebastian is on our radar but we had never heard about Soria...I'll check it out.
Would you say any of them are overnight stays?

I gave them as overnight stays. There are things to see in between.

Are you renting a car? Just an FYI that it is generally very expensive to pick up a car in one country and drop in another so that might be something you want to consider...

We are renting a car in Madrid when we arrive & we will keep it until we return to Madrid.
