Direct train CDG to Languedoc
If we chose to tour Languedoc region instead of provence, would it be wiser to take the train to Nimes or some other city instead of Avignon?
We will be renting a car.
You see, part of our discussion has been about wanting to visit Lourdes... so we may have to do Languedoc region instead of Provence. Not that that is a bad thing... just different.
Any help would be appreciated.

It's up to you to set your driving route. I like to drive just about anywhere in that region -- it would make little difference to me in which city I arrived, because I would be covering a lot of territory no matter what.

And I really would think twice about Lourdes, but perhaps that's my prejudice. Despite being raised as a Catholic (or perhaps because) I found it profoundly unsettling and commercial. I would never want to go back again, and much prefer any small Romanesque church if I want a 'religious' experience.

YOu can take a direct train from CDG to Montpellier in LAnguedoc Roussillon, as I've done it. This might be better than Nimes, being a bit farther west if you really want to tour Languedoc Roussillon. It probably depends which place you'd rather use as a base.
Of course this depends on the Lourdes issue, which I assume means you'd leave that area and drive to Lourdes to stay a day or so. There are trains from Lourdes to Paris, but it's a long trip of about 6-8 hrs. If you had to leave from Paris, that is do-able, though. Or fly out of Toulouse.
If you just thought that was close, Toulouse is closer and there are occasional direct trains to Toulouse from CDG, but not a lot. The only one I see now is at 4 pm and gets there late at night as it's about 6 hrs. Bordeaux is closer to Loures than Nimes, I think, and that is only about 4.5 hrs from CDG by direct train.
I think if you are set on Lourdes, you should visit the area around Toulouse, including Carcassonne, that should be enjoyable. You can also visit Albi whle there, lots to do.

But as I said in the first reply -- it depends on the length of your stay. You can cover a lot of territory with a rental car. If you are spending several days in one city -- Toulouse or Lourdes or Nimes or whatever -- a car is rather useless.
