We were in Orvieto last year, and it was my favorite city in Italy. We ate at the restaurant that is famous for its Boar. I'm a big fan of trying different foods, but found the boar rather dry. As for deer, they are probably farm raised deer, not hunted, and will be very tender and fat free. Delicious. Farm Raised deer imported from New Zealand sells for about $23. a pound around here..if you can get it. So I'd say dig in, enjoy..its what one travels for.
