Dining in Provence(and more)

Dear Fodorites~we have the hotels/inns reserved for October and now look forward to diving into the details. I'd love suggestions for restaurants and other "musts", We will have 2 weeks. We begin in Avignon then on to St. Remy surrounds(4 days). We plan a day into the Camargue. I think St Maries but welcome ideas about Aigues Mortes. We then are on to Isle sur la Sorgue and a stay at Mas de Cure Bourse. We plan on a dinner(at least) there but will be there for 2 days including the market. From there on to Bonnieux for 2 days and at least 1 meal at Le Fournil. Any other ideas including wine excursions? Our final two days are in Aix en Provence. We then head back to Paris for 2 more nights at Hotel Jardin Luxembourg. They have recommended the Maree Verte. Has anyone eaten there? It will be my birthday so something special is just the ticket. Any ideas..for comparisons, we love Astier.

One of the best restaurants near Bonnieux is La Feniere, just past Lourmarin on the road to Cadanet.

I've eaten at Mas de Cure Bourse but never stayed there; I'll be eager to hear of your experience. Your trip plans sound wonderful.

Another recommendation: in tiny village of Les Imberts, there is the Mas Tourteron, whose chef is also a woman, as with Mas de Cure Bourse.

If you go as far east as Moustiers Ste-Marie, I recommend Restaurant des Santons and the whole journey!

In Aigues-Mortes, Les Capucines, right in the main square, is a nice place to eat. Bull and octopus are some of the specialties, and both are excellent.
Also in the Camargue, La Telline and La Chassagnette (in Sambuc) are both extraordinary.

I've stayed at the Cure Bourse. We had a room with a balcony where we shared breakfast with one of those little Provence lizards that scamper in and out of stone walls.. The room faces aside the dining terrace. The rooms in back overlook the swimming pool so if there are late night swimmers it could get noisy. We like "Fournil" alot
in Aigues-mortes, we like "La Camargue."
The only great restaurant, IMO, in Aix, is "Clos de Violette." In aAvignon, "Bain Marie," Heily Lucculus"Christian Etiene,"
