Dijon to Avignon
We need to train from Dijon to Avignon and would like to do it easiest way there is Are there any direct trains on that route and if we do need to change is it rather simple?

Easy. If you want a direct train you take the fast TGV that has its own station about 6km outside of the old town of Avignon. 09:21-12:07.

Most services require one switch, in Lyon Part Dieu, not a problem. Lots of services all day long.

Otherwise you search for Avignon Centre, plenty of connections all day long also.

The 9:21 michel points out is by far the fastest most seemless connection - direct Dijon to Avignon TGV then waiting shuttle train to Avignon Centre station takes about 3 hours all told:

Dijon Ville dep 09:21 +0 TGV 6821 TGV Duplex Direction: Nice Ville

Avignon TGV arr 12:07 +0
Transfer time 19 min.

Avignon TGV dep 12:26 +0 TER79210 Train Express Regional Direction: Orange(Avignon)

Avignon Centre arr 12:30 +0

Book tickets ASAP for discount TGV ducats-can always buy and get on buying there but at a premium- anyway check to book your own ticket online.

Most other rail links take an hour longer or more if just regional trains - this is the train you want to book.

TGVs are usually Deplex -double-deckers and the view from the upper deck is IMO far superior than from the sunken lower deck where views are often obscured by retaining walls and wind blocks - you can chose your own seat when booking so get on up top!
