On your hotel question: from what I hear, the delle Muse is a very good hotel for an out of the way, low cost hotel. I am acquainted with a couple who go to Rome often and stay nowhere else. They seem to have influenced a great number of their online associates to stay there, and I really haven't heard anyone complain.
I wouldn't want to stay there, but if it turns out to be the most economical way to get you to Rome, why not?
As you said, you can always get another hotel for the last two nights.
If I've got this right, the next lowest fare was 560pp. 715-560=155. Let's say you do some careful shopping, and get rooms at 155 a night, per room. You'll need two rooms. So you still come out a night short. BUT, you may be able to do an apartment and have the cost come out the same as the package.
