Day of week & train for day trips to Segovia, Toledo and El Escorial
We will be in Madrid in late March and intend to do day trips to Segovia, Toledo and El Escorial on Thursday, Friday and Saturday, in that order. Is there any reason to go on different days?
We'd likely buy train tickets for Toledo and Segovia in advance, as I've read that it may be hard to get tickets to Toledo at the last minute. We'd take the local subway to El Escorial, so that wouldn't require advance purchase.
Current plan is to arrive at Segovia at 11.43 and depart 16.07 and to arrive at Toledo at 10.53 and depart 17.25. Does this sound like a good amount of time?

Don't over buses, always cheaper and sometimes more convenient and faster. For example the bus to Toledo dumps you are the square and the train is outside of town and requires a long uphill walk or bus or taxi into Toledo.

The bus to Toledo takes a lot longer than the train. Also, the bus station is much further from our Madrid hotel than the train station.
Any thoughts on the other parts of my question?

The bus from Toledo train station to town takes less than 10 minutes. No big deal
From Segovia train station, the bus ride is longer ( 4 km.) and buses less frequent.
We spent about the same time as you plan to do in Segovia and Toledo and saw what we wanted.
We took a TAXI from and to train station in Segovia.
If you wish to have a lunch in Segovia, and take a bus to town you will need a bit more time.
The train for Toledo departs from Atochs station ( close to center) , for Segovia Chamartin ( in the North of the city - 12 metro stops from Sol)
I found day trips after another stressful, but it might work for you.

How long would you stay in Toledo and Segovia?
For Segovia, the bus may make more sense. If I understand correctly, the bus leaves from Principe Pio metro station, which is closer to our hotel (we'll be near the Prado) than the Chamartin metro station and leaves us closer to the center of Segovia. Buses are every half hour.
The walk from the Toledo train station to town doesn't seem that long. The bus from Madrid would take at least an hour longer (including getting to Chamartin).

The bus to Segovia may be a better option. The train ride is short, but a lot of tunnels.
In Segovia, we were interested in walking around the town, seeing the Viaduct and the Church. The time was long enough for us, many here prefer to explore" more and have a long lunch. .
Some people like staying over night in Toledo ( it is jammed with tourists during the day) but the time you have was fine with us.
