Croatian Itenerary Help

My wife and I will be in Croatia for in June. We fly into Dubrovnik on the 14th and need to be in Zagreb on the 22nd but we are not sure how we should fill the intervening days between landing in Dubrovnik and arriving in Zagreb.

We were thinking about starting with 3 days in Dubrovnik. Then we could drive to Mostar for a quick trip before heading to Korcula for 2-3 days. This does not seem to flow very well and I was hoping I could tap into the expertise here for a better plan.
Information about us that could help (in no particular order):

1. We are in our early 30’s so still interested in nightlife but not into the all-night party scene.
2. We value experiences that give us the local flavor.
3. We are looking forward to good food and a visit or two to local wineries.
4. We want to fit in a short fishing trip (found a great looking one in Korcula) and a kayak trip (thinking Dubrovnik but anywhere is fine).
5. We want at least one day dedicated to laying on a beach.
6. We have a car reserved starting the 17th in Dubrovnik with a drop off in Zagreb on the 24th. This is easily cancelled if a car will be a hindrance but the price was too low to pass on.
7. Finally, we plan to visit Plitvice Lakes as a day trip after we get to Zagreb so it doesn't need to be included here.

We'd appreciate any help you guys can provide.
