There is no fast ferry service from Hvar to Dubrovnik. The catamaran KRILO or KRILO JET (www.krilo.hr) leaves Hvar every morning at 0740 every morning for Split, then you can get a bus to Dubrovnik. For other connections by sea, see www.jadrolinija.hr.

I'm a MAJOR foodie and had some great meals in Croatia. If you are going at the end of September I would recommend seeking out spots that serve fresh white truffles. You can also go truffle hunting as we have done - loved it. However, if you stick around the south you may not be able to have access to truffles. Istria is the region for that.
Fresh seafood can be excellent, too, but pricey in Dubrovnik. We enjoyed it better in the northern part of the country.

Oh, and the north also has great spit roasts - lamb and pork are best. Prsut (better than prosciuotto) is worth finding as well as Pag cheese. Peka (food cooked under a lid) is wonderful. Again, those are found in the more northerly regions, however...

I can confirm what travel2live writes - real foodies can find heaven in Istria. In fact, there are 4 different edible truffles found there, including the lovely white truffle that is best in autumn, but fresh black truffles can be had all year long. Personally, I recommend finding a restaurant that does not serve its tartufi dishes with a heavy cream sauce, even most indeed do so.
Spring is the wild asparagus season - when the roadside woods are full of foodie tourists picking handfulls of it to take back to Italy or elsewhere. Wild asparagus is best with fresh pasta, gnocci or frittata.
Fresh mushrooms, like truffles, are found all year, but of course different varieties.
Istria has two distince food cultures, and both will remind you of regions of Italy - one is seafood based and the other is inland. Don't look for restaurants that do both - leave the other tourists behind and find the local konobas that specialise in serving what their neighbors bring them each day from the sea or from the woods.
How can real foodies not love this place?
And to compliment the meals - read others posts on wines...
