It would depend on the hotel, most accept CC nowadays, but I'm sure you'll run across some that may not. I won't stay in a hotel that doesn't accept CCs but I can't remember the last time I ran across one, although I haven't been to Germany that much and stayed in pretty mid-class hotels there in major cities.
Maybe if you were a little clearer on what kind of hotels you are talking about and where you expect they will be, someone could be a little more specific on advice.

Most travellers here will say that they use ccs for the bigger purchases [hotels, main meals, excursions] and cash for smaller things like single tickets, drinks, etc. etc.
THey would also agree i think that the best place to get cash is from an ATM.
only you can decide if that will work for you.
the advantage of using c/cards for bigger purchases is that you have the c/card co's guarantee to rely upon in the case of disputes. There's no reason why you shouldn't use it to buy a cup of coffee if you like, but most people don't.

Have been traveling in Germany forever and the last time I stayed in a place that didn't take a CC it was a gasthaus - and was about 15 years ago.
I'm sure there are a few that want euros but almost all will take CC. In any case, the web site of each will tell you.
Restaurants are similar, but with a higher % of small, modest places preferring cash. But we have never found it a problem. Generally I expect to pay cash for anything less than about $20.
