Cooking...what is heavy cream in French?
we've tried to figure this out when we went to the Monoprix, but ere clueless. We'er trying to make a beurre blanc sauce and bought sour cream instead. Help!!!

Epaisse. we purchase it un-refrigerated and it's from Normandy. It comes in a square box a little larger than a cigarette pack. Screw top (either red or blue).

You can also buy it in tubs and jars.
You bought sour cream in France? Are you sure you didn't buy crème frâiche? I've never seen sour cream in France. |

Creme Entiere is heavy cream. Creme legere is light cream. Creme Fraiche Epaisse is the sour cream type thing - Epaisse is 'thick" Stu Dudley |
Thank you all. We saw the unrefrigerated box,but were a little unclear. Tomorrow, dinner.our apt. 9:oopm. My sister's an excellent cook!

Traditionally, sauce beurre blanc is made with finely chopped shallots, cooked in white wine/vinaigre/lemon juice, and whisking in clumps of unsalted butter (over low heat). A diary product other than the butter is not absolutely necessary.
I should think that adding either crème fraiche or crème entière might work for you but purists insist that if you add cream it's not beurre blanc. |
You might also want to check the fat content, which is the easiest way of telling which type of cream you want. Heavy, whipping cream is usually 30%.
I too have never seen sour cream in France, and suspect you have creme fraiche, which can also be used in cooking. |
