Corn meal here comes white or yellow, bolted or unbolted. White is the preferred in KY for most things. Unbolted is unsifted with a gritty texture. This link from a nearby mill shows the cornmeal. Click on the pics to see the texture.

Just to add I can buy Maize Flour in my local independent health foods shop, it is subtitled Fine Polenta Flour. Non Genetically Modified, 95p for 500g.

Interesting recipe, though I'll have to have a think about converting decilitres to a quantity I can understand better lol!

I can help you with that. When I made it for the second time I weighed it out after putting it in to the measuring jug
2ozs sunflower seeds
3ozs pumpkin seeds
4ozs sesame seeds
3.5 ozs linseed
7ozs polenta or 4ozs maizemeal.
