Classic Restaurants in Spain

Hi all,

I would like to know what classic restaurants you would recommend for the Spanish cities listed below. I would like restaurants that are under 30 Euros per person, that have a sampling of the local cuisine (no Italian, Japanese, etc.), and that are accessible by local transport. By classic I mean something like Katz Deli for NYC.

I already have a list of restaurants I'm planning on going based on Tripadvisor ratings, location, and opening times but would like your insight on what constitutes a classic.

The only restaurant I have so far that seems like it fits the bill is San Gines in Madrid.

** stars denote places we especially need your insight for!

Granada
Ubeda
Sevilla
Cadiz
Cordoba
Merida
Salamanca
Madrid
Toledo
Segovia
Leon
Burgos

There are actually many restaurants in NYC that are older than Katz's. Maybe not not by European standards. Fraunces Tavern dates to 1763, Katz's 1888. But Fraunces makes terrible pastrami.

In Madrid, I'd add

La Bola

Casa Labra

sadclown, tripadvisor is the worst source to find restaurants. Anyone who cares about taste would look into the Michelin Red Guide and all questions are settled. Also available online under viamichelin.com.

The OP is clearly not looking for the best restaurants but another category.

But I agree, at least 50% of the people on the on-line restaurant sites have no idea of which they speak, especially on ethnic restaurants. My favorite comment was on Yelp regarding a NYC tapas place-"The portions were too small."

"The portions were too small." Haha
Our best recommendations have come from store clerks.
