City Ideas for Several-Day Trip from Edinburgh

City Ideas for Several-Day Trip from Edinburgh
DS has been admitted to U of Edinburgh (!!!), and he'll likely go to university there (we live in the U.S.). It may be just me taking DS to school, DH may not get the time off work. We're tentatively planning that DS and I will go early enough for several days of being tourists in the area before getting him settled into Edinburgh and the university.
After that, I'm thinking of taking a couple of days, maybe three nights, as I'll already be in Europe, to go somewhere on my own, just for me! It would need to be somewhere easy to get to via EasyJet or RyanAir from Edinburgh, then a direct flight to Frankfurt for the flight back to the U.S.
The easy option, very delightful, would be to spend time in a city I know and enjoy - Paris, Brussels (really) or Bologna are tops for this. But I'm also thinking of trying a city I've never been to (preferably somewhere DH has no interest in): Lisbon, Vilnius/Kaunas, Barcelona (which we've been to, but I loved more than DH), ????. We've been to most major cities in Italy, and a number in France and Spain, Belgium, Netherlands, Ireland, Czech Republic, Hungary, Austria, Germany, Switzerland. Not interested in the Germanic countries for this venture. DH is interested in Scandinavia, so I'll leave those out for now.
I love culture and museums, primarily art; history of most eras; and good regional food.
I'd love to hear any ideas or suggestions - I'm definitely having fun day-dreaming about the possibilities.

Go to the Edinburgh airport website and see the destination list for direct flights.
Go to the Frankfurt airport website and see the destination list for direct flights.
List the destinations they have in common.
Choose one that your "gut feeling" tells you feels right.
Any reason why you're not interested in the UK as you're already there?

Scottish friends went to St Petersburg for an overnight. They live near Aberdeen, so I am not sure whether they flew from Edinburgh.
When we were at EDI the first of November, I know I saw planes leaving for Turkey and am virtually certain Warsaw as well.

Thanks. Yes, have been to London several times, I should have mentioned that; and that may be where DS and I play tourist. With DS in Scotland, I'm guessing we'll spend more time in the UK over the next several years, so I want to be a little more adventurous with this trip.
I've already made a list of RyanAir and EasyJet destinations, and have compared them to Frankfurt. Lufthansa flies almost everywhere, it seems, though some of cities don't work as well; the flight from Vilnius leaves for Frankfurt at 6 am or something like that. No Edinburgh flights to St. Petersburg - that would have been a great choice otherwise. Turkey, it's Dalaman, which didn't appeal to me. Warsaw is a possibility - though I'd love some suggestions of why it would be good destination.

lincasanova - Istanbul isn't a destination for either RyanAir or Easyjet, and may be next year's big trip, which I'm very excited about. Krakow is a possibility - what can you tell me about it?
