Paris Walks has a chocolate tour that is about 2-3 hours. It doesn't occur as often as their other walks, so you need to check their schedule as you get closer to your travel dates. The website is www.paris-walks.com

I know a few. First, there is this woman who gives private tours that are very very expensive and she has one related to chocolate, if I saw that right

Problem is that it is $700 per half day for one to four people. It may be very good, but that's a lot.

I know several others that are real cheap and only about an hour. Gerard Mulot participates (his shop is pastry and chocolates), as well as Girard and maybe some others.

This is a wonderful website where you can sign up to visit French shops or factors for very small fees for mini-tours

Just go to the section on there called "Programme" in the middle, and then under gastronomy to find chocolatiers. They have these tours a couple times a month or something, so you should find something during your dates that would be of interest.
