Just my own experience over the years, the big difference is the internet. In the early 70s, unless we booked a major hotel, there was no way to find small or out of the way places ahead of time unless they were in a Fodor's or other guide. We used to arrive in some small town and go to the local tourist stand or start asking around for places to stay. This took time, but back then was part of the experience. We walked around and picked anything that looked good when we got hungry.
Now, every place with a room to rent can have a website, every restaurant has a website, and travelers can easily ask other travelers for advice. I think many people want to make sure they get good value for their money, so they do the research. Actually, that seems smart and does not waste time once you are there.
I am too lazy (and getting too old) to get that specific in planning, but do read trip reports and watch for things that seem to be especially interesting. We also often amble about, booking at the last minute, some good, some bad. I can live with that, enjoy more just hanging out in new and favorite places, not minding that we are missing seeing stuff.
However, it is wonderful to be able to get specific help with transportation, Etc., especially at the last minute. I appreciate that.
It is all about the individual getting the experience they want. If they need to plan for that, they are lucky to have information available. I do not think it takes away from their enjoyment. It probably reduces stress for new travelers.
