Like janisj, I have stayed at Ruthin Castle but, again, it was years ago. I recently had another look online, and it seemed fine. Reviews were good. They have a Medieval Banquet if you're interested.

Castell Deudraeth, Portmeirion is a Victorian interpretation of what a castle should be like. I've not stayed there, but if you are expecting four poster beds you will be disappointed. It is close to Portmeirion village which is wonderful and well worth exploring with its decidedly quirky architecture. There are some lovely walks around the very extensive grounds too.
Glandyfi Castle is also an early C19th building again with very modern bedrooms. It is also a very attractive part of Wales with some good scenery.
Ruthin Castle is actually medieval - the oldest of the lot. It is in the centre of Ruthin with is rather an ordinary Welsh town with not a lot going for it. Scenically the area isn't as interesting as either of the other two. The Prince of Wales room and the suites do seem to have a bit more character than the deluxe or luxury rooms or the rooms in the other two castles.

Thanks! Been busy making numerous iterations of this trip (40th anniversary-3 weeks almost--London, Cornwall, Wales) and think I about have it nailed down. Including seeing about rooms in these 3 "castles." Might be back with more queries for suggestions.
