Whenever we have paella, we pick beforehand on serrano ham, olives, almonds, a little chorizo and bread.

Bread is always better if you can "sop" up the chorizo juice with it.

ohh, Comfy !! If you eat too much mazapan and turron you will ruin your hard work at the gym !! Just don't do it !! :P

I have enjoyed paella in Valencia and was assued it was "traditional". Each one was very different.

If you are going to cook this outside on coals be very careful of the heat. You need chunk charcoal and you need to let it burn down. Also, your paella pan needs to be good and heavy - not a flimsy North American version.

Kend, Sorry but I crave sweet food and have been dealt with good genes so far as gaining weight :) Plus I am exactly where I need to be. By the way, ever heard from laartista?

This thread by amsdon is making me hungry for paella. That's it, tomorrow lunch at a spanish restaurant nearby.

Altho it was many moons ago, everytime we ordered Paella Valenciana in Madrid, I grant you not Valencia, but in *Spain* nonetheless, it always had "mariscos", chicken and sausage. No rabbit that I could identify, but definitely a mixture of meat and fish.

PS Just noticed the date, and assume your get together went by >1 year ago! :)

Yes I started this thread last year but brought it back because someone else raised ther paella pan subject. I had made many arroz(s) and several paellas before this but since te initial post in 07 I have done the outdoor method a few times and it it superb. So much better than indoors the result is truly better and not hard. I think in large part because the typical (American) burners on the stove just are not that big to accomodate a good paella. In fact it's nice to have everything ready and go outside, make it and drink wine as you wait.
Don't be afraid try it, you'll love it!
