The best way of contacting Italian restaurants is the phone, always and everywhere. Italians don't love email, and many never check it. Never. And for September, it's way too early to make a reservation at any normal (as opposed to "world-class and always overbooked") restaurant - two days or, if need be, one week in advance would be far more appropriate.
