As is implied by the variety of comments you've received, there is a transition going on in French hotels regarding business. More and more, the practice is to offer variety and choice. Less and less, one sees the traditional sparse breakfast. Simply ask the desk clerk what the practice is. Muguet is a favorite of the Americans that work in my company. They have a decent breakfast, but I haven't been there in a few years so am unable to give you precise info and even if I could, I wouldn't count on it not having changed by the time you get there.
