Branderson's Improved Spain Itinerary

Alright, I hope I haven't bugged the community too much but it's been a few months since my last post and I've gotten together more figures and dates for flights.

Background on me: 25 year old active, adventurous history buff and lover of food and wine (I work as a sommelier) I haven't been to Europe since I spent the first six months of 2012 in Florence. During that time I made several trips both solo and with groups mostly through Western Europe as 3 or 4 days weekends would permit. I've been to Spain before but REALLY am enamored by Andalusia due to it's history, culture, food, spirit and vibrancy! As I get closer to making this trip happen I wanted to post my itinerary to see what the more experienced and traveled frequenters of this site think as I am a bit nervous but excited.
I will be flying from Boston to London via Wow Airlines and from London to Madrid via RyanAir. I've done budget air a bunch of travels so you could say I am "low frills".
Boston > London Feb 17
London Feb 18-19 (I've never been to London and figure since I need to fly in to Europe using Wow's destinations this would be a great city to catch a very quick glimpse of. I'm sure it will go by in an instant but I will make my list of places to go reasonable)
London > Madrid Feb 20 AM Flight
Madrid Feb 20-23
Madrid > Toledo 2/23
Toledo Feb. 24
Toledo > Cordoba Train Feb. 25
Cordoba Feb 25-Feb 26 PM
Cordoba > Granada PM Train

A couple of things I'm looking for: advice on the itinerary. Is it too rush for someone who likes to move kinda quickly? Any special places not to miss on this trip? I am definitely seeing the Alhambra and will book in advance. I know the Flamenco festival will be taking place while I am in Jerez so I will definitelt be attending! I like doing a lot of walking and really stretching across my destinations. Which of these destinations will be ideal for finding a respite in my travels. I understand this is rigorous to be on the road for three weeks. I initially wanted to go to Malaga for a beach break (I know it won't be swim weather) but just to do some mindless relaxation. I took it off of the trip due to lack of things I may be interested in. I do love art as well so I plan to see a good bit of museums so recommendations are strongly welcomed. I also love photography so special spots would be great. And lastly if there are destinations you think I should certainly make, maybe things off the beaten path in Andalusia, please! I am all ears...or eyes in this case.
One last thing, my girlfriend may or may not be joining me. I don't really think this changes anything but I figured I'd throw it out there. We have similar interests.
