Katzen, it's a chain of bakeries/patisseries. Try the pain aux escargots if you make it to one-delicious.

Thanks Mvor! I have the biggest sweet tooth .. so I will most definitely will be checking this out when I go in August.
I'm assuming from their site that they are a chain .... is there a bakery that you all recommend that is not a part of a chain, but that is just an exceptional, one of a kind, not to miss kind of place?

Do they bake on the premises or is the bread delivered?
Actually, I remember getting a sandwich at a bakery in the Loire (not sure which chateau) and the back listed some kind of cooperative of bakeries so there may be some kind of centralized service which supplies all these quaint bakeries with either the bread or at least the dough and other supplies.

I believe Paul bakes on the premises.
Paul is a bit strange in that it is frequented by many Parisians, despite the fact that it is a chain. Normally one thinks of chains as being of lesser quality than individual bakeries, but Paul seems to be invalidating that notion, and it is doing very well.
They are everywhere in Paris, so it's not hard to find them.
