Budget isn't a big deal at least not every night but I'd like the food to just be really good no matter what it is

If you want high end and among the best restaurants in the country - The Kitchin (yes, that is the way it is spelled), or Restaurant Martin Wishart. Both are in Leith very near each other and near the Royal Yacht.

We loved the Grain Store and Lovage for dinner.
