Having had to keep to a budget on some of our long trips, it is sometimes a good idea to book a place like you've found in Apt, so you know you can stay SOME where that fits your budget. If they have a good cancellation policy, you might stumble on someplace with more character that fits your budget (and obviously doesn't advertise on the internet) which you can switch to after a couple nights. And if that doesn't happen, you can happily stay at the same "base."
We've found more inexpensive places to stay in Languedoc-Roussillon than in Provence. In fact, while it isn't really in Cathar country, you might want to see if you can snag a room in Uzes (very near Pont du Gard) for a night. We stayed at La Taverne, which is a two star (no elevator) and lovely. I'm not sure what their rates would be in season, as we paid 80euro in November 2010. BUT, if you are there, possibly on a weekday, and they have rooms available, you might negotiate a similar rate or lower as a single. It never hurts to ask!
