Tough call. I have visited both as day trips and enjoyed both but can't comment on the overnight scene. Why not be guided by whichever one is more convenient to your travel or has the better hotel for your needs?

We stayed a few nights in Bad Wimpfen several years ago and did day trips to Schwaebisch Hall and Dinkelsbuehl. We really enjoyed staying in Bad Wimpfen. It was truly a little gem. We stayed at the Neckarblick Hotel which is pleasant 3 minute walk into the old town.

Aramis is right that Schwaebisch Hall is larger, but we were so impressed with the beauty of the old architecture in Bad Wimpfen because it WAS smaller. But it had been a very important town at one point (note the Arcades in the Great Hall of the Staufen Imperial Palace) and the buildings still standing are a testament to that importance.

Even if you don't stay in Bad Wimpfen, it is definitely worth visiting.
