Bed & Breakfasts and/or Low Cost Hotels

I am travelling for 4 weeks in June throughout eastern Germany, Belgium, Lux, Austria, Switz and Northern Italy. I am getting ready to start booking accommodations. Is there a chain of low cost, but clean, hotels/motels in some of these countries?
In Canada, B&B's are often high end and must be booked well in advance. In these countries, in this time, would I be able to find some clean B&B's without booking ahead (not every day - some days). In the larger tourist cites I will book ahead, but what about if I'm "off the main highways and major cities"?

The name for low-cost, clean, B&B style accommodation in Germany and Austria is "Pension". If you google that plus your destinations, you might get a few good hits. Usually the cost of the room comes with a slap-up breakfast of meats, cheeses and bread rolls, yoghurt, etc. The standard of accommodation in most places in Germany and Austria in particular is generally high.

Since you are travelling in summer, I would not leave it to chance.

Where are you going to in Belgium? If you are heading to Brussels, accommodation is generally expensive but you can often get cheaper rates on the weekends because the Eurocrats have gone home for the weekend. In Belgium you will often find accommodation described as a B&B on websites.

I might just add that Luxembourg City will be more expensive than surrounding countryside - this city also houses European institutions and the banking industry so I'd try weekends there as well.

Look at Motel One and Accor brand hotels. The Accor Ibis, Ibis Budget and Hotelformuleone.com are at the cheaper end.
