Apple Strudel in Salzburg or Vienna
Is it possible to find the apple strudel that is made the old fashioned way in Salzburg or Vienna? The dough is stretched and pulled on a sheet, it is so thin you can read a newspaper under it. I can remember my paternal grandmdother, from Austria, making it and she never had any tears in the dough. My mother learned but sadly I never did. Everything I find in the U.S. is made from freezer dough. I would like to find the "real thing" in Austria. Thanks

You can find apple strudel anywhere in Austria. Any good pastry shop or cafe offers is and it's usually delightful.
If you want it in a romantic setting then go to the town of St.Wolfgang (about an hour east of the city of Salzburg), go to the hotel White Horse Inn. There you sit basically on the lake shore (in a kind of porch over the water) and their apple strudel is wonderful. Thanks so much for your reply. I tried making it once before my Mother passed away. It was so tough I was the only one that would eat it. I was determined I would not throw it out. I would love to see the dough being "pulled and stretched" someplace. (if I am using the correct wording) Would bring back memories. Thanks again. By the way, what is the correct wording if I go into a cafe and ask how it is made.

Apple strudel is SO good! :) If you are in a cafe then there is probably no chance to ask them (they usually buy their strudels from the local pastry shop). So better to go to a local bakery or a pastry shop and ask them. They all know English so just ask them how to make and pull the dough for Apple Strudel (pull is the correct word). If you need that expressed in German then you would say something like this: "Wuerden Sie mir bitte erklaeren wie man den Teig fuer Apfelstrudel macht und wie der Teig richtig duenn ausgezogen wird?" (Translated that's: Would you please explain to me how to make the dough for apple strudel and how to correctly pull the dough into a thin sheet?" Hope this helped. I haven't visited Vienna yet but am looking forward to the Apple Strudel at Café Residenz In the Palace at Schönbrunner.

I love apple studel...one of my favorite reasons for visiting Austria! We had many good strudels in both Salzburg and Vienna. You can find them all over the place, and most are truly wonderful.
I recall having an excellent at Cafe Central, Herrengasse 14, in Vienna. Its a popular cafe, and the interior is gorgeous. We sat there for a few hours in the afternoon having apple strudel and coffee. In Salzburg I just stopped in numerous cafe's and had the apple strudel, and all were very good. I attended the "apple strudel show" in the lower level of the Cafe Residenze in the fall of 2003. The strudel itself, the setting and the pastry chef conducting the demonstration was absolutely lovely. Especially after a cold, rainy day at the Schonnbrunn. I do make it based on their receipe which they provide and it is delicious. You must convert it from metric however. I make a point to ask for apple strudel wherever we have traveled in Germany, Austria and Hungary. I have discovered no one in Europe, so far, that cannot make fabulous apple strudel.

On my first trip to Austria in 1983, my husband ordered apfel strudel everywhere, while I discovered the glories of topfen strudel (cheese). mmmmm!

I had an excellent Apfelstrudel at a café vis-a-vis Servitenkirche. I liked it because it wasn't as sweet as and more "appley" than the other Apfelstrudel I had throughout the city. |
