anywhere within a 3 hours drive of Paris which offers nice hiking and views? (doesn't have to be mountains)
 
preferably to south and/or east of Paris? and can be gotten to/from within 3 hours or so?

something which has nice outdoorsy stuff to do, nice views... would the Alsace Lorraine or Champagne areas fit the bill for pretty outdoor hikes? how about Strasbourg and environs?

...perhaps the Parc du Morvan would fit
your requirements; lots of hiking trails, rolling hills, lovely scenery
plus the bonus of Autun or Vézelay.

The Morvan would be wonderful, and about the only area that would have what you're after fairly near to Paris.

There's the Forest of Fontainebleau southeast of Paris. There are no mountains, but lots of lovely hiking trails.

Just a thought.

All of the Vexin, but especially Chateau Gaillard above Les Andelys for a spectacular view/hike up, to see the bend in the Seine where Richard the Lionhearted figured he could command all river traffic, coming or going for twenty miles.

There's another cool castle rather cut into a huge stone face not far from there, also on the Seine. It has architectural elements from adding on that has spanned at least six different centuries. I'll see if I can come up with the name, if someone doesn't recognize what I am talking about first.
