Not a castle, but a fine old manor house in Egha (near Windsor) that was once a hunting lodge of Henry VIII:
Great Fosters. The old rooms have beautiful tapestries; some have enormous bathrooms, and some rooms are huge.
Another excellent place is Tylney Hall, also not far from Heathrow. It's a lovely manor house with extensive grounds. We sent friends there some years back, after our own second stay, and Tylney Hall is now their benchmark against which other hotels are measured. Very nice plae.

Allington Castle near Maidstone
I used to put my bike tours up at Allington Castle, a dreamy enough castle on the banks of the Medway River in a sylvan setting. The place is run by a bunch of monks as a meditative retreat but rents out rooms to anyone. Quain old lock on river with quintessential country pub by it.
