We visited a small producer of balsamic vinegar two years ago, near Modena. Some of the vinegar has to age for many years -- five or ten or twenty years, and even longer! We tasted some that was 50 years old! Imagine what kind of loss to the industry this could be if they have to start over. And Parmesan cheese has to age for 18 months to two years. I understand from our local fine foods store that the price of Parmigiano Reggiano has already doubled after the first earthquake.

This is a huge loss of livelihood for many people in Italy at a time when their economy was depressed already. I feel very sorry this has happened to them.
