You asked about "must dos". Don't overlook the Amsterdam historical museum. It is recently redone with excellent audioguide. It goes in chronological order. Be sure to allow enough time to see the more modern part which is at the end. http://en.ahm.nl/

And of course Anne Frank house, Van Gogh museum all appeal to adults and teens.
