Amsterdam Central to Brugge
Husband and I will be in Amsterdam for 5 days and would like to take a train to Brugge for a day and then take a train to see the catherdral in Cologne, Germany. Any advice on the best way to do this? The time from Amsterdam Central to either of these spots would be great. I think a day trip to both of these during the winter is a good idea, don't you? Gives us time to get back to hotel (Victoria), shower, rest and go out in Amsterdam. Can you send me any advice you might have? Thanks.

That would be a pretty strenuous day. The travel time alone (with layovers) from Amsterdam to Cologne via Brugge is 8 hours.
The ICE train from Amsterdam to Cologne, however, only takes 2h36m, which would give you plenty of time to see the Dom and maybe indulge in my favorite Germany sport, river cruising and Kölsch drinking.
Then take an evening train to Brugge and stay the night there, returning to Amsterdam the following evening. I am a great proponent of moving from city to city in the evening rather than first thing in the morning as most people do. It gives you an opportunity to relax and have supper, then the next morning you can explore your new surroundings well-rested and fresh.

Amsterdam - Brugge is 3 hrs 35 min. with one change in Antwerpen, intercity train. This means more than 7 hours on the train if you want to do this as a daytrip!
Amsterdam - Köln (Cologne) is 2 hrs 34 min. on the intercity express (reservations recommended).

The challenge is to get your sightseeing interspersed among the train riding in such a way as to be meaningful. One possible timetable (if lingering in each destination isn't important) might be:
Amsterdam - Cologne 07:05 -09:41 (first train)
Cologne - Bruges 13:16 - 16:29
Bruges - Amsterdam 20:03 - 23:39 (last train)
That gives you less than 4 hours in each destination, but at least you won't have to change hotels as would be the case if you overnighted it. If you want to adjust this schedule, I suggest you keep your trains to single-connection trips, thereby minimizing your enroute time and maximizing your sightseeing.

I think you should shelve your plans to visit Brugge on this trip (although Brugge is definitely worth seeing) and perhaps go to Delft instead...a *somewhat* similar vibe and a LOT closer to Amsterdam.
