Amsterdam, Brugge and Strasbourg
 

We are spending 7 days in Amsterdam, Brugge and Strasbourg in May and would like some help regarding how long to spend in each, the best way to travel between each city, what to see and do and what to expect weather wise and tempatures. Also any suggestions on good cafes and where best to stay in the towns for ease of getting around. Names of good 3 star plus accomodation would also help.

Not sure where you are flying into and out of...but we loved all 3 cities!

Amsterdam we stayed at the lovely Boogaards B&B http://www.boogaardsbnb.com/ and it was fantastic. Very short walk from the train station and right by the major canals and city centre. Highly recommend it! Tell Peter Jamie and Scott say hi!

I think the easiest way to then get to Brugge is to take the train. I believe you would have to change in Brussels, but its easy. I cant remember the name of the place we stayed in Brugge but it was nothing special.

And again, to get to Strasbourg the train would likely be easiest. We stayed at the Hotel Rohan http://www.hotel-rohan.com/ in the heart of Strasbourg and it was a great location right beside the cathedral.

if I read this right, you only have 7 days to visit all 3 cities?...If so I would strongly suggest you forget those plans.
Stay in AMS and maybe go to Brugge If you do a search on this forum for the latter most say it is worth at least an overnight stop, if only to get away from the day trippers. The rest of the time stay in AMS.

In Brugge, highly recommend Hotel de Tuilerieen. Excellent property, nice large rooms, beautiful dining area and 5 min walk to main square.

Does the 7 days include travel to Amsterdam or wherever you are starting from? Does it involve jet lag?
I feel, like ribeirasacra, that it is too much to do in 7 days, even if those 7 days don't include the initial travelling. It would effectively give you less than two days in each place. Whilst that may be enough for Bruges (imho -others will disagree), and possibly for Strasbourg, though I could happily stay there longer, 2 days is not enough time for Amsterdam.
However, you can get a train from Amsterdam to Bruges and you can fly direct from Brussels to Strasbourg Monday to Friday. The flight takes an hour, and if you book it early enough is quite cheap. Brussels airlines flies it twice a day. The return to Ams for your return flight is slightly more problematic - only KLM-AirFrance fly direct and they charge a lot! It may be better to fly out of Paris and take the TGV, or fly out of brussels.

You do know that it takes at least 6 hr to get to Strasbourg from Amsterdam by train?

With only 6 nights, I suggest 4 in Amsterdam and 2 in Brugge

OR

Go to Strasbourg, rent a car and visit Alsace for 6 nights.

Is there a direct train from Amsterdam to Strasbourg? I'll be in Amsterdam in September but will have to go to Strasbourg for a wedding but I don't want to stop by Paris anymore, if possible.

Sorry - there are no direct trains. There aer many options - between 6 and 7 hours - with at lest one change and many having 2 or more changes. Being in France the best train connections to Strasbourg are from Paris.
